We Love Bon Matin’s American-style Cheesecake

Cheesecake is one of those foods for which the experience of texture is so important. Some prefer the light, dainty Japanese-style cheesecake (angel food cake for fat angels, we say) while others can only get high from the raw, stick-of-cream-cheese-in-each-slice intensity of the New York-style cakes. The best cheesecakes are usually found in American-style restaurants whose chefs understand its potential, but at these spots, you have to eat your way through multiple courses to get to the main event and, admittedly, we hardly like any of the non-dessert food. There are precious few places if you’re after just a slice of delicious cheesecake. Luckily there’s now Bon Matin’s baked cheesecake (RMB30). Though it’s billed as French-style, this is really an ode to the classic American cheesecake. The oval cakes approach New York texture with innards the color of custard and an oven-browned top. It’s all corralled in by a substantial layer of broken, buttery shortbread–you can literally feel the change in velocity in each bite as you go from the creamy cheese to the crust. Our tip? Keep it in your fridge for a day to give it that full New York consistency.
