The Roujiamo is China's version of the burger, but it's even tastier. Even though it's a Shaanxi original, you can find the popular snack all over Shanghai. We've took to the streets to find you three of the best. Check them out below.

Xiao Chang An 小长安 | Xibei
This ramshackle snack joint serves roujiamo (肉夹馍, RMB8) that are shimmering beacons of greasy goodness. Take off your cufflinks and roll up the sleeves for this messy feast. The steamed bread, normally just a bland meat consumption vehicle, is emboldened with flavor-wrought oil, and cumin and anise meld with the pork fat to make the flaky bits of meat and supporting bun irresistible. It may be a dive, but it’s our go-to spot for authentic roujiamo.

Xi’an No. 5 Mipi 西安5号米皮 | Xibei
Basically a street-stall operation that found its way indoors, Xi’an No. 5 Mipi represents a new low in service and environs, but offers fresh and authentic fare. Buns are pulled from a kiln and the meat is chopped up practically right next to you. This place thus comes ahead with the best tasting bread. The cumin lamb roujiamo (RMB6), has a good heat to it, thanks to minced green peppers, and the beef roujiamo (RMB6) is stewed to a rich thickness, giving it a consistency and ambiguously spicy flavor not unlike Mexican mole.

Tang Yun Qing Feng 唐韵秦风 | Xibei
This full service restaurant offers “cumin beef roujiamo” (孜然牛肉夹馍, RMB12 for two) as an appetizer, and it’s the closest thing to an upscale roujiamo experience that we’ve found. Additionally, the beef filling has considerably less salt and oil than our other selections and is thus more suited to the local, or perhaps laowai, palate. This is certainly the easiest (and most hygenic) way to experience a unique snack usually found on the streets.
